Zucchini noodles (zoodles) with eggs

Zucchini noodles (zoodles:) are an excellent substitute for a classic spaghetti. With vegetables and eggs, they make a delicious dish.


  • 5 tablespoons of olive oil
  • 2 zucchinis
  • 1 red carmen pepper
  • 1 white onion
  • 3 eggs
  • 1 cup of tomato puree
  • 1/2 tbsp Aromatica’s spices Vesela Lucija
  • 1/2 teaspoon of Himalayan sea salt

To make zoodles:

1. Finely chop onion and pepper, and make a zucchini spaghetti with a spiralizer.

2. Add olive oil and onion into Delimano deep pan. Occasionally mix in medium heat until the onion becomes glazed. Add pepper, zucchini, salt and spices. Let it cook for 10 minutes, with occasional stirring.
4. Add the tomato puree, mix all and let it cook for about 5 minutes.
5. Add eggs between vegetables. Create 3 nests in the mixture for the eggs and carefully crack each one into its nest.

6. Dish is done when the eggs are cooked.

Serve with you the favorite salad (I chose a lettuce with sliced white onion, poured with pumpkin seeds oil) and with a glass of black dry wine.
