Carrot cake

“A party without a cake is just a meeting.”

Ingredients and preparation steps:

To make a biscuit:

  1. Preheat oven to 175 ºC.
  2. Mix cake mix, eggs, kefir and melted butter for 3-5 minutes. Add carrot and stir it all up.
  3. Pour the mixture into baking mold greased with butter and bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.

Carrot cakes are usually covered with cream cheese frosting. Because my better half loves chocolate, this cake is covered with dark chocolate. You choose your favorite frosting. Dark chocolate, cream cheese or something else.
This cake goes great with coffee and tea. Just perfect chill for the long weekend!
