Spring bite with spring onions and rocket!
I combined them in savory pancakes and in a delicious sauce!
Ingredients and preparation steps
For the sauce
- 250 ml of homemade milk kefir
- a handful of washed rocket
- 2 young onions (bottoms removed)
- a handful of fresh basil leaves
- 1 clove garlic (squeeze)
- a pinch of salt
- 2 teaspoons olive oil
- tablespoon of fresh lemon juice
Mix all the ingredients in a blender, try the sauce and add more salt if necessary.
For the pancakes
- 400 ml of homemade kefir
- 2 eggs
- a pinch of salt
- teaspoon of a mixture of dried basil and oregano
- 2 young onions
- handful of rocket (washed, dried with paper towels and cut into smaller pieces)
- 4 tablespoons of gluten-free flour mixture
- 2 tablespoons teff flour
First mix the kefir, eggs and spices, then add the flour and mix all into a uniform mixture. Then add the onion cut into thin rings and arugula.
Bake pancakes about 10 cm in size on a heated pan.
Drizzle the pancakes with the sauce and enjoy the flavors.
Although we have vegetables in both sauce and pancakes, I like to eat them with a big salad.
