Raw cherry and homemade kefir cheese cake

For me, everything can be an inspiration for a tasty meal.

It can be an article, a color or song, but this time I found inspiration in beautiful Rendes kitchenware.
The moment I saw Rendes plates, I knew that they will go great with tasty raw cake made with cherries and cheese from homemade kefir.

Ingredients and preparation steps

To make a cake base:

  • 100 g of walnuts
  • 100 g of pecans
  • 200 g of almonds
  • 200 g of pitted dates (soaked in water overnight)
  • teaspoon of vanilla extract

To make a cream:

  • 400 g of pitted cherries
  • 200 g of cream kefir cheese
  • 200 g of cashews (soaked in water overnight)
  • 50 g pitted dates (soaked in water overnight)

Cake base:

– Blend almonds, pecans and walnuts. Add them vanilla extract and dates. Blend all into homogeneous mixture.

– Put the mixture in a baking tray in which you previously placed baking paper.

– Leave in the fridge while making cream.

Cherry cream:

– Blend cashews until they become creamy. Add them cheese, cherries and dates and blend for about 2 minutes, or until the mixture is smooth and creamy.

– Pour the mixture on a base and leave in the freezer for several hours or overnight in the fridge.

Decorate with chocolate dipped cherries.

Serve with coffee and enjoy!
