Chia pudding with milk kefir

Chia seed pudding is a delicious and healthy breakfast that also saves time in the morning, as most of the preparation is done the night before.

To make chia seed pudding, simply mix chia seeds with a liquid such as milk or yogurt of your choice (I prefer dairy kefir), and then refrigerate overnight. One of the best things about chia seed pudding is its versatility – you can customize it in so many ways. You can make it with almond milk, coconut milk, or any other milk of your choice, yogurt or milk kefir, and you can add your favorite sweetener, such as honey, maple syrup…You can also add toppings like fresh berries, chopped nuts or granola, to give it extra flavor and texture.

Ingredients and preparation steps

Here are three delicious ideas for assembling your chia seed pudding, which will sure please your taste buds.

For all three recipes, I used the same ratio of chia seeds and milk kefir – 200 ml of milk kefir and 30 g of chia seeds. Mix the kefir and chia seeds in a glass jar, close it and refrigerate overnight. In the morning, take the kefir with chia seeds out of the fridge and use it as a base for your pudding.

Carrot cake – First, grate 1 carrot. Add ½ teaspoon of cinnamon and add grated carrot to the pudding. Mix well and sweeten with honey if you need extra sweetness. And for a more “cake-like” taste, add two tablespoons of rolled oats (along with chia seeds) to kefir the night before.

PB&J – Peanut butter and jelly are the inspiration for this combination. Add a handful of raspberries to the pudding and mash them with a fork. Then add 2 teaspoons of peanut butter.

Chocolate and banana – Mash a banana and add it to the pudding. You can either melt chocolate and pour it over the pudding with banana or chop it into small pieces and add it for the extra crunch.
