Ingredients and preparation steps
This amount of ingredients make 14 muffins.
I used silicone muffin molds.
Preheat the oven to 190 °C. .
Wet ingredients:
– 200 ml of homemade kefir
– 2 large eggs
– 100 ml of coffee (cool down)
– 1 1/2 teaspoon of rum flavoring extract
– 125 g of melted butter
Dry ingredients:
– 250 g of gluten free flour
– 45 g of raw cacao
– 3 teaspoons of baking powder
– teaspoon of baking soda
– teaspoon of cinnamon
– 100 g of cane sugar
– pinch of salt
In a large mixing bowl whisk together dry ingredients.
In another mixing bowl whisk eggs, then add to them other wet ingredients, one by one.
Pour the dry ingredients into the wet ones and mix well until totally combined.
The batter will be very dense.
Scoop the batter evenly into the muffin moulds.
Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Remove from the oven and allow to cool completely.
Glaze muffins with honey and sprinkle with sliced blanched almonds.
