Chicken bruschetta

Bruschetta doesn’t have to be with bread!

Instead of bread use chicken fillet, add Mozzarella cheese, a few more ingredients and enjoy the flavors!

Ingredients and preparation steps

  • 3 chicken breast fillets
  • 1 teaspoon of salt for the chicken
  • 3 tablespoons of baking oil
  • 125 g Mozzarella cheese, sliced
  • 200 g Bumblebee tomatoes cut into pieces
  • ½ purple onion, finely chopped
  • ¼ teaspoon of salt
  • 1 tablespoon of olive oil
  • 1 tablespoon of vinegar
  • 1 tablespoon of water kefir (optional)
  • a handful of basil leaves crushed with a mortar and pestle or finely chopped

Mix sliced tomatoes, onion, salt, olive oil, vinegar and kefir and add crushed or chopped basil. Mix everything well and try a little and if necessary add more salt and set aside.

Wash the fillets, dry them with a paper towel and cut them into steaks of approximately the same thickness and add salt.
Fry them in pan with heated oil. When the steaks are baked on one side, turn them over, bake for a few minutes, then add a slice of Mozzarella cheese to the steak and cover with a lid. Bake for a few more minutes, so that the cheese melts a little.

Top chicken stakes with tomato mixture and enjoy the flavors!
