Spring omelette

This omelet is a mix of spring goodies. Of course, homemade kefir is part of this tasty dish.

Ingredients and preparation steps:

  • 4 eggs
  • 10 g butter
  • handful of cooked ham (sliced into smaller pieces)
  • 3 tablespoons of homemade kefir
  • 2 spring onions (cut into medium sized thin rings)
  • 4 radishes (sliced into medium sized thin rings)
  • 2 pinches of Himalayan sea salt
  • teaspoon of Aromatica Spice Mix – Adriatic Spice

In a bowl, whisk eggs, kefir, salt and spices. In a medium non-stick skillet over medium heat melt butter then add onions, ham and radishes. Bake with stirring for about 3 minutes. Pour in eggs mixture and tilt pan so eggs fully cover the entire pan. As eggs start to set, use a rubber spatula to drag cooked edges into center of pan. Tilt pan to let uncooked egg fall to the edge of the pan. 

Serve with your favorite salad. With this omelette I chose tomatoes and paprika (with spring onions) and with homemade kefir cream cheese.
