Chicken breast fillets in raspberry and blueberry marinade

Ingredients combo like these make me love Summer!

Blueberries, raspberries, fresh mint and basil in a tasty marinade, grilled chicken fillets and salad with milk kefir sauce. Simply yum!

Ingredients and preparation steps

For the chicken

  • 450 g chicken breast fillet
  • salt

For the salad

  • a small head of lettuce
  • a handful of blueberries
  • a handful of raspberries
  • 100 g of feta cheese

For the sauce

  • 200 ml of milk kefir
  • 1 tablespoon of fresh lemon juice
  • 1 tablespoon of honey
  • 2 tablespoons of olive oil

For the marinade

  • 100 g of blueberries
  • 100 g of raspberries
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of cane sugar
  • 7 basil leaves
  • 7 mint leaves

Wash the fruits and vegetables first.
Prepare everything for the salad. In a large bowl add lettuce (cut the leaves or tear them into smaller pieces), blueberries, raspberries and cheese cut into cubes about 0.5 cm in size.

Put the salad aside and make the sauce. Add all the ingredients for the sauce into the jar, close with a lid and shake well to mix all the ingredients, then put it in the fridge.

Then make the marinade. Place all the ingredients for the marinade in a deep saucepan and cook with stirring over low heat until the mixture thickens. Turn off the heat and cover the pot.

Then, wash the fillet steaks, dry with a paper towel, salt and bake. If you have a yard with a grill, definitely throw it on the grill, if not, a grill pan will also be good.
Dip the grilled chicken steaks one by one into the marinade.
Take salad sauce from the fridge and pour it over the salad, mix and serve with the fillets covered with marinade and toast with a glass of Merlot!
