The plan was to serve jello in a grapefruit and lemon peel, but when I saw this little watermelon, I said, the citrus recipe will come later.
Also, it is important to pay attention to the temperature when making jello with water kefir.
The temperature must not be high because the heat will destroy the good bacteria from the water kefir and we don’t want that at all.

Ingredients and preparation steps
- ½ smaller watermelon
- 2 bags of Dolcela gelatin
- 200 ml of water kefir
Hollow out half of the watermelon and blend the “meat” of the watermelon. Strain the blended mixture through a thick strainer to obtain juice.
Add watermelon juice and water kefir to a small bowl.
Add the gelatin to the heated kefir and watermelon juice, turn off the heat and stir until the gelatin is completely dissolved.
Pour into the hollowed-out rind of half a watermelon, leave at room temperature to cool completely then put into the fridge overnight.
The next day, cut into slices.
I added crushed cocoa beans and made some watermelon seeds.
