Toast may seem like a small slice of bread, if you look at the surface, but trust me, it holds a whole lot of flavors. You just have to play with the ingredients. This time I combined blue cheese, apricot jam, figs, pears, walnuts and chicken thighs fillet.
Chicken can be combined in different dishes, it contains a good amount of protein, without a lot of fat and additional carbohydrates. In Međimurje, at the antibiotic free farm, the breeders are faithfully dedicated to growing food, creating and maintaining quality from field to table, and the “Antibiotic Free” certificate guarantees that the chickens have never received any type of antibiotic at any stage of their life cycle.
Ingredients
- 8 to 10 slices of gluten-free toast
- 600 g of thighs fillet of Međimursko chicken
- 2 large purple onions
- butter for roasting chicken and onions
- 200 g of cream cheese (I used homemade kefir cheese, but any other cream cheese according to your taste is suitable – ABC, Vajkrem,…)
- a handful of finely chopped walnuts
- 100 grams of blue cheese (with noble mold)
- 2 tablespoons of apricot jam (preferably homemade)
- 2 pinches of salt (even better if it is smoked)
- 2 pears (better if they are not ripe)
For the salad – oak leaf, crystal or butter
Preparation steps
- Mash the blue cheese with a fork until it becomes creamy, then add the cream cheese, jam, salt and finely chopped walnuts and mix everything into a creamy mixture. Place in a container or jar and close with a lid.
- Wash the fillets, dry them with a paper towel and add salt.
- Heat a large frying pan over medium heat, melt the butter and fry the fillets until they are cooked and golden in color. Take the baked fillets out of the pan onto a plate and cover them to keep them warm.
- On the same pan, fry the onion rings. Add more butter as needed. Fry the onion until it becomes glassy.
- Cut pears and figs into slices.
- Cut the fillets into smaller pieces.
- Heat slices of toast on a pan or in a toaster and spread them with cheese spread, add a couple of roasted onion rings, pieces of fillet, a couple of fig slices and a pear slice.
- You can also add salad leaves into the toast.
