The experimentation with gluten-free flours continues – Walnut flour cake.
This cake is dense, full of ginger and walnut flavors, and it goes really well with cream cheese and banana frosting. If you don’t like the tangy taste of kefir cheese or cheese in general, you can combine the cake with your favorite cake frosting or chocolate ganache. Homemade apricot jam also goes really well with this cake.
First, some interesting facts about walnut flour and then the recipe!
Walnut flour is made from ground walnuts and is often used as a substitute for gluten-containing flours. This flour has an exceptionally rich and intense nutty flavor and gives a special aroma to the dishes in which it is used. The nutritional value of this flour is very high – it is rich in unsaturated fatty acids, monounsaturated fatty acids, protein, and fiber. Additionally, it contains vitamins E and B complex, and minerals such as copper, iron, and magnesium.
Walnut flour can be used in the preparation of sweet and savory dishes such as bread, pastries, cakes, pancakes, cookies, as well as added to smoothies or soups. As mentioned before, its distinct flavor can influence the final taste of the dish, so it should be used carefully to achieve the desired flavor.
Ingredients and preparation steps
For the cake:
- 125 g walnut flour or finely ground walnuts
- 6 eggs
- 9 tablespoons honey
- tablespoons fresh grated ginger
For the cream:
- 300 g kefir cheese or fresh cottage cheese
- 1 large banana
- 1 teaspoon vanilla extract
- 1/3 teaspoon cinnamon
Preheat the oven to 185°C.
- Line a pan measuring 20 cm x 14 cm with baking paper so that two edges hang over the sides of the pan (for easier removal and slicing).
- Grate the ginger and mix it with honey.
- Divide the egg yolks and egg whites into separate bowls and beat the egg whites well with a mixer until stiff peaks form.
- Then, beat the egg yolks until foamy and add the ginger and honey mixture, mixing everything well.
- In a separate bowl, add the walnut flour, egg yolks, and honey, and mix well with a spatula/wooden spoon until you get a uniform paste. The mixture will be thicker. Then add the egg whites gradually, stirring everything well until you get a uniform mixture.
- Spread the mixture evenly into the prepared baking dish. Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
- Remove from the oven and let cool. In the meantime, make the cream.
- Beat all ingredients for the cream with a mixer until you get a creamy mixture.
Serve a slice of cake with banana and kefir cheese cream. This combination also goes well with coffee, tea, or a glass of homemade kefir!
